Tomorrow I get to wear my favorite green St. Patrick’s Day parade T-shirt that I brought home from Dublin several years ago. I don’t even know if it’s going to fit me anymore, what with all the weight shed!
To prepare for a tomorrow’s day of being fully Irish, I have bought kale and potatoes for dinner and i have home brewed Irish stout cooling in the fridge. Vegans can eat Irish, too, dammit! I am also baking up some Irish soda bread with currants to serve along with strawberry jam for tomorrow’s breakfast, though this is the first time I’ve attempted a vegan loaf rather than my usual buttermilk version. I am using a recipe from Happy Herbivore, only substituting currants for the raisins:
