June 10th–What I Ate Today

My work schedule and the heavy rain conspired today to ensure I gave my body the rest that it needed. With no run and no MMA class, I took it easy on the food. This was a real challenge, given the higher stress of a heavy work schedule and the blahs from the dreary weather, both of which lead me to crave comfort foods like chocolate and cupcakes, but I managed. My only concession was a late night handful of Thing 2’s peanut butter and chocolate flavored cereal.

Breakfast:

  • Smoothie with banana, strawberry, blueberry, frozen mango, romaine, kale, flaw and chia seeds, unsweetened soy milk, and water
  • Cinnamon raisin Ezekiel muffin with almond butter
  • Coffee with stevia

Morning Snack:

  • Iced peppermint ginger green tea

Lunch:

  • Tofu nuggets
  • Wilted spinach with garlic, caramelized onions, and Sicilian lemon white balsamic
  • Potato salad with a splash of sriracha
  • Coffee with cardamom, almond milk, and vanilla flavored stevia extract

Afternoon Snack:

  • Iced tea
  • Small bowl of red cherries

Dinner:

  • Brown rice pasta with kale spinach pesto, grape tomatoes, and Tofurky spinach pesto sausage
  • Mixed greens salad with tangerine balsamic

Dessert (late night, after work):

  • Dates
  • Almonds
  • Small handful of Leapin’ Lemurs cereal
