Ship’s Log–July 1st

Still bloated today. I’m no longer certain if it’s the party food, the humid weather, yesterday’s hard run, or hormones. Whatever it is, I want it to go away!

Thing 1 and I agreed that we need a complete break from Ezekiel muffins. We decided that this week we are going to break out of the smoothie + toasted something with nut butter breakfast rut we’ve been in and try to go for a more varied array of morning menu options. It’s not that smoothies and toasted somethings are bad, but it has gotten boring.  So today we made a tofu scramble, which was really quite a bit more filling that I am used to having for breakfast.

Breakfast:

  • Tofu scramble (red onion, garlic, grape tomatoes, broccoli, tofu, turmeric, Italian herbs, nutritional yeast, Daiya pepperjack shreds, coconut oil, and a wee bit of water)
  • 1 slice whole wheat toast
  • 1/2 Grapefruit
  • Coffee with stevia

Morning Snack:

  • Iced peppermint, ginger & green tea

Lunch:

  • Whole wheat wrap with tempeh chicken salad from Dean’s Natural Market, avocado, romaine, kale, and sriracha
  • Leftover slaw
  • Red Grapes
  • Orange vanilla seltzer
  • Coffee with Stevia
  • Two Brownie Bites

Afternoon Snack:

  • Iced tea
  • Hummus and baby carrots
  • Handful of vanilla almond granola (where the heck did the chocolate chips go???)

Dinner:

  • Chickpea cutlet (from Veganomicon) topped with HP sauce
  • Baked sweet potato with salsa
  • Salad: romaine and kale with grape tomatoes and cucumber topped with a sprinkle of Fauxmesan and tangerine balsamic

After Dinner Munchies:

  • Brownie bites
  • Wasa crackers with hummus
  • Banana with Justin’s chocolate hazelnut butter
