Ship’s Log–July 8th

Thing 1 continues to be ill, but her fever is at least a little lower. At this point, I don’t know if we’ll be doing to 12 miles at all this week. Even without it, we should be able to complete the half marathon strong, though perhaps not with a personal best. I really hope that no one else in the house comes down with it in the meantime, so I am focusing on serving up food that will bolster our immune systems.

Thankfully to dojo is open again, so I made it out for a 45 minute Muay Thai class. I had been missing my classes, and it felt great to have that part of my training back. Sometimes a girl just needs to hit things.

Breakfast:

  • Smoothie: raspberries, banana, frozen peaches, red leaf lettuce, romaine, kale, flax and chia seeds, unsweetened soy milk, and water
  • Blueberry oatmeal muffin with a smear of almond butter
  • Coffee with stevia

Morning Snack:

  • Iced green, peppermint ginger tea

Lunch:

  • Sprouted grain tortilla with sausage seitan, Daiya provolone, pizza sauce, and sriracha
  • Cole slaw
  • Red leaf lettuce, romaine, and kale with pineapple ginger tahini dressing
  • Cold brew New Orleans style coffee with unsweetened soy milk and vanilla stevia
  • 1 square 88% dark chocolate

Afternoon Snack;

  • Sliced pink lady apple with vegan peanut caramelly dip (1 tbs peanut butter, 1 tbs brown rice syrup, pinch of salt and splash of vanilla, microwaved for 20 seconds then stirred together)
  • Pre-class: two brownies bites

Dinner:

  • Soup made with broth leftover from last night’s seitan roast, black beans, corn, roasted red pepper, stewed tomatoes, and mixed frozen greens and topped with Daiya and sriracha
  • 2 whole wheat Wasa crackers
  • 1/2 glass of Merlot with seltzer
  • Dish of granola with chocolate chips and 2 marshmallows
