Ship’s Log–November 24th

I really wanted to run today, I did. But between the still-swollen and achy foot and the frigid temperature, going for a run was off the table. Instead, I let the foot rest in the nice, warm, cozy house.

Today’s Fitness:

Nada

Breakfast:

  • Whole wheat everything bagel with peanut butter
  • Clementine
  • Coffee

Lunch:

  • Salad: mixed greens, sprouts, grape tomatoes, pan seared tofu cubes, shredded carrots, cucumbers, and zucchini, shiitake marinated in Braggs liquid aminos, and sesame ginger dressing
  • Hot New Orleans style coffee with soy milk
  • 1/4 vegan chocolate chunk cookie

Afternoon Snack:

  • Popcorn
  • Pumpkin pie smoothie: pumpkin puree, frozen bananas, oats, almonds, unsweetened soy milk, pumpkin pie spice, vanilla extract, and maple syrup

Dinner:

  • Baked acorn squash stuffed with brown rice risotto with dried cranberries and edamame
  • Sauteed mixed green: brussels sprouts, kale, and broccoli
  • White wine
