Ship’s Log–March 9th

Inspired by a post on Buzzfeed, this week I’m experimenting with homemade nut cheeses. Up first is this Baked Almond Feta. I cheated and baked it after only 4 hours of straining (rather than 12), which resulted in a creamy, spreadable texture more like a cream cheese than a feta. The flavor is amazing, regardless, and it was perfect on crackers. This is certainly something I will prepare for company in the future.

Fitness:

  • 3 mile run

Breakfast:

  • Daily Detox Drink
  • Apple oatmeal muffin
  • Smoothie: banana, strawberries, frozen blue berries, romaine, kale, flax and chia seed, soy yogurt, and water
  • Coffee

Morning Snack:

  • Sample-sized hunk of vegan soda bread

Lunch:

  • Salad: mixed greens, baked tofu, cucumber, carrot, tomato, and red pepper dressed with vegan mayo, pineapple white balsamic, and a squirt of sriracha
  • Wasa cracker with herbed tofu spread
  • Coffee

Afternoon Snack:

  • Chocolate mint tea
  • Slice of soda bread
  • Kale chips

Dinner:

  • Crackers with homemade baked almond feta
  • Crock pot seitan with HP sauce
  • Baked sweet potato sticks
  • Mixed greens (broccolini, spinach, and kale) sautéed with garlic and white wine
  • Glass of Gewürztraminer
  • Mixed fruit
  • Sugar cookie. Not my idea, but Thing 2 bought me one to cheer me up after a challenging day
