Ship’s Log–July 22nd

Thing 1 is now old enough and skilled enough in the kitchen that we’ve decided to give her the responsibility of preparing a full dinner one day a week. Today was her first dinner, and she came up with a menu of handmade chicken-flavored seitan cutlets, potatoes and green beans from the Farmer’s Market, and gravy…which was quite an ambitious meal for a week night, given that the seitan cooking time alone was over 90 minutes.

She pulled it off well, and I now look forward to enjoying one night off cooking each week without needed to resort to take out.

Fitness:

  • 3.5 miles speed interval run: warm up, drills and strides, 4 intervals of 1/4 mile fast (@ 7 min/mile) and 1/8 mile easy, cool down
  • 30 minutes walk around Ocean Grove, NJ
  • 1 hour BJJ class

Breakfast:

  • Whole wheat pancakes with local blueberries topped with local peaches, spiced pecans, and maple syrup
  • Coffee with vanilla stevia and almond milk

Morning Snack:

  • Banana
  • Cold brew New Orleans style coffee with vanilla stevia and almond milk

Lunch:

  • Tempeh BLT with chipotle mayo on multi-grain baguette
  • Kale salad
  • Flavored seltzer

Afternoon Snack:

  • Veggies and hummus
  • Coconut chips and spiced almonds
  • Veggie chips

Dinner, prepares by Thing 1:

  • Chicken flavored seitan cutlet on smashed potatoes with gravy
  • Green beans
  • Cantaloupe
  • Hell or High Watermelon beer
  • Citrus spiced almonds & 2 coconut date bites
