Ship’s Log–September 8th

I aimed to eat clean today as my poor legs strive to recover. My right knee especially is a nearly constant source of discomfort. I can’t cross my legs or the knee really starts to hurt. Ugh. I added half an avocado to my lunch salad, ate an apple in the afternoon, and added lots of ginger to dinner…all anti-inflammatory foods, which I hope will help the knee heal quickly.

Distance to Goal Weight: 20.8 pounds

Fitness:

  • Nada. Used today to rest and recover

Breakfast:

  • Mixed fruit (strawberries, blueberries, blackberries, raspberries, and banana), plain coconut milk Greek style yogurt, and granola
  • Coffee with vanilla stevia and almond milk

Lunch:

  • Salad: red leaf, romain, red cabbage, red onion, carrots, shiitake, avocado, and Korean BBQ tempeh dressing in miso, sriracha, and blackberry ginger balsamic
  • A few spoonfuls of raw vegan freezer fudge

Afternoon Snack:

  • Coffee with pumpkin pie spice, vanilla stevia, and almond milk
  • Apple with peanut butter
  • 2 wasa crackers with hummus

Dinner:

  • Quinoa, kidney beans, sweet potatoes, and mixed greens (kale, broccoli, and green peppers) with carrot miso ginger dressing
  • Small dish of spiced almonds, coconut flakes, and granola
